Falafel and shawarma’s are some of my favourite foods, bringing back memories of when Hubby and I were first dating and we’d visit Ardi’s in Kenilworth for a late night snack after a night out, not really wanting the night to end!
So I don’t stay up the whole night any more and tend to stay away from fast food chains (these things happen when you grow up). I do however enjoy the falafel from the guys at the Neighbourgoods market but I always wondered if I could make it with fish. So after getting some advise from the ‘all-knowing’ Twitterverse I created the fish Pita and even if I do say so myself the result is delicious, the flavours combine very well and the result is a fun, healthy, tasty, rather messy dinner enjoyed by all.
Julie’s Fresh Fish Pita’s
Serves 4, with 1 pita bread each
The Tzatziti
1 English cucumber
2 cloves garlic, crushed
250ml Greek yogurt
Salt and pepper
Grate the cucumber, place in a colander and allow to strain for 1/2 an hour, some of the excess liquid will drip off, you can also push down on the cucumber with a spoon to increase the amount of liquid that comes off.
Combine the the cucumber, yogurt and garlic.
Season with salt and pepper.
The Hummus
1 can chickpeas
1/2 the liquid from the chickpeas
4 Tbsp lemon juice
1 1/2 tsp tahini
2 cloves garlic, crushed
Salt
2 Tbsp olive oil
Drain the chickpeas and set aside the liquid from can.
Combine all the ingredients except the liquid.
Use a hand blender or food processor and blend until you have a smooth paste, adding the chickpea liquid as needed.
Heat the Pita, either in an oven or toaster.
Top with the cooked fish and spoon lashings of the tzatziki over the fish
